One of the best ways to understand a Chef’s culinary philosophy is to allow yourself to be taken on a sensory journey via a chef’s tasting menu. Lucky for us, our new Head Chef, Anthony Naylor has officially taken over the helm at the trendy and stylish Abode Bistro and Bar located at PARKROYAL Darling Harbour, Sydney this month, just in time for Aussie Wine Month.

Chef Profile

Hailing from Dublin, Chef Anthony started his career at the tender age of 15 when he was offered the opportunity of a lifetime to train under the tutelage Chef Patron Derry Clark at the Michelin Star restaurant L’Ecrivain. Over his 20 odd years of career, he’s left his mark across the UK and Europe before arriving in NSW to clinch not one but two chef hats in the Gault & Millau Restaurant Guide as Head Chef at Prime Steak Restaurant.

In the spirit of celebrating Oceania wines, Chef Anthony is working his magic on enhancing natural flavours of fresh, local and seasonal produce from local small growers to bring them into a symphony of textures and flavours, complemented with pairing wines curated by himself and his team.
